Our fines de claire Vertes Label Rouge Marennes Oléron are matured in our clay basins for several weeks. They are not very fleshy and necessarily green , testament to their greening in clay basins.

This much appreciated color is obtained thanks to the Blue Navicle, a micro-alga naturally present in clay basins.

You can taste them from October to May, which guarantees they are not milky .

  • We advise you to keep your oysters for a week or so, cool, either in the refrigerator or in a cellar. Between 5 and 15 degrees.
