Talking about quality for a food product is very subjective. The tastes of some are not necessarily the same as the tastes of others. We have therefore established rules so that the oyster that we offer under the name of Ecaille d'Argent is as desired by lovers of real specials.

 

So are oysters, as it is with all the things, objects, animals or others, that surround us. There are some, there are some remarkable, there are some good, there are some best. When a product is distinguished from others, it should not be allowed to drown in the mass of basic batches. Purists, connoisseurs, gourmets, will not look any longer, and will find in him the happiness of their taste buds.

 

In our role as a refiner, we seek the best raw product, which will give an unequaled refined product.

 

We have our oyster, it remains to give it a name worthy of it ...! It will flow naturally from one of its essential qualities.

 

Its abundant and tasty flesh, long in the mouth, often leaves a sweet taste on the taste buds. This flavor is an ideal characteristic for a special oyster.

It must surpass the tastes of salt and iodine, common to less fleshy and less tasty products. L'Ecaille d'Argent is a high-end oyster. We therefore decided that its filling rate would be at least equal to that of special Pousse en claire,  a minimum flesh index of 12.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

The whiteness of its mother-of-pearl, the absence of parasites harmful to the shell (in old French: tortoise shell) justify the name Ecaille d'Argent, a brand that we have registered with the INPI. A healthy and solid shell, a very luminous, almost silvery mother-of-pearl. This last quality is at the origin of its name.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

This oyster, which is often highlighted in the works of the painter Logan ( www.logan-art.com ), and praised by the gastronomic review "Régal", therefore combines only qualities.

The Spéciale Ecaille d'Argent are raised in the waters richest in phytoplankton, the best parks on the French or Irish coasts. They are selected from these parks and produced in partnership with producers of impeccable know-how. Very fleshy, tasty at will, the Silver Scales are the special for the discerning connoisseur ... whoever knows ...!

They are worthy of the seafood platters of the best scallops and they compete with the best known products of the special oyster market.

 

Les Ecailles d'Argent will delight you all year round.

 

As soon as they arrive at our establishment, the oysters are placed in "claire". Selected from the start and an exceptional product, the Ecaille d'Argent has little to acquire to be perfect. Like the Special Pousse en claire, it is sold white or green, at the whim of amateurs. However, maturing in "claire" will transcend the taste of this oyster and give it a unique taste ... that of Ecaille d'Argent.

 

An exceptional oyster deserves to have a beautiful setting to enhance it as it should. For this reason we have bet on originality and refinement to allow amateurs to spot our Ecaille d'Argent at first glance.

These baskets were designed with a wicker print to recall the baskets of yesteryear, with a chic and sober, burgundy cover, in order to best enhance this product with a delicate taste.
